NotMilk is the First Plant-Based Milk Created by AI

NotMilk, an AI-made plant-based milk, has now entered the US market and is available at Whole Foods Market nationwide.

NotMilk is a new plant-based milk alternative made by Latin American food technology company, NotCo, and is now launching in the US. The company uses artificial intelligence and machine learning algorithms that help mimic animal-based foods using plant-based ingredients.

The milk alternative is designed to provide consumers with the same taste and texture that replicates dairy-based milk. The dairy alternative is made with a blend of pea protein, chicory root fiber, pineapple juice, coconut oil, sunflower oil and cabbage juice. The milk comes in two varieties, NotMilk Whole and NotMilk 2% Reduced Fat.

What differentiates this plant-based milk from others is that is it made, and has been created, by an AI and machine-learning system called, Guiseppe.

“When you think about the taste of milk, a human mind would never think that a combination of pineapple and cabbage would recreate the taste of milk, but Giuseppe — our artificial intelligence — can and does,” said Matias Muchnick, founder and chief executive officer of NotCo, in a statement. “That’s the power of introducing a new technology into an obsolete system: You’re adding a whole new world of innovative possibilities that are good for us and the environment.”

NotMilk is available at Whole Foods Market nationwide and is lactose-free, soy-free, gluten-free and non-GMO. Each one cup serving contains 90 calories, four grams of protein and three grams of sugar.

“We know 33 percent of plant-based milk consumers in the US move back to dairy because of compromises in taste,” said Lucho Lopez-May, CEO of NotCo in North America and former president of strategic growth channels at Danone SA. “We are here to change that. There are many options in the market, but they miss something — whether that be look, taste or texture — but NotMilk has it all.”

NotCo uses technology that can match animal protein to its ideal replacement among many plant-based ingredients.

NotCo has been using the AI technology since 2015 to create plant-based meat, ice cream and condiments.

In September, NotCo announced an $85 million Series C funding round with investors which include Bezos Expeditions, Future Positive and L Catterton.
